Easy Strawberry Ice Cream Cake

I love all kinds of cake – ice cream cakes included. They are perfect for all kinds of occasions. And so many people love eating ice cream with their cake, why not make a cake that includes both?! This cake does just that, with the bonus of including fresh strawberries for summer.

This strawberry ice cream cake recipe is super easy to follow too. It starts with my well-loved Moist Vanilla Layer Cake, but the recipe is cut in half for just one 8-inch cake layer. It makes a wonderful base for this ice cream cake. On top of the cake layer is a strawberry filling. It’s an extra step that may seem unnecessary, but I wanted to pack a little something extra into this cake and the filling layer does just that. It’s cooked over the stove to remove the excess water so that it’s not icy, but ends up creamy and full of strawberry flavor. If you’re a big strawberry fan, you don’t want to leave this layer out.

The cake is topped with strawberry ice cream and you can either use store-bought or make your own. I love my no-churn strawberry ice cream and it would make a great homemade option. However you go about about the ice cream layer, finish off your ice cream cake with some homemade whipped cream and decorate as you like. This cake is sure to be a hit for summer – and even year-round for true ice cream cake lovers!

Easy Frozen Fruit Salad Cupcakes

Frozen fruit salad had never really been on my radar until I tried it at a local ice cream shop years ago. A creamy, frozen dessert with chunks of fruit in it? I tried it, fell in love and decided to make my own version.

In this frozen fruit salad, creamy sweetened condensed milk is folded into light and fluffy cool whip along with a hint of lemon juice for brightness and some almond extract for a uniquely deep flavor. Maraschino cherries, bananas, and pineapples are mixed into the smooth filling before it is spooned into muffin tins and frozen solid. The result is a light, refreshing dessert with just the right amount of sweetness. It’s perfect for spring and summer days and is sure to win over a crowd.

The Best Ice Cream Cake Recipe

I am such a fan of ice cream cakes! Wether you’re enjoying a slice on a hot summer day or for a birthday any time of year, it’s the perfect treat. It is the best of both worlds – cake and ice cream in one. And this recipe is so versatile, you never need another one!

This recipe is based on my LOVED Copycat Dairy Queen Ice Cream Cake. Instead of 2 layers of ice cream separated by a decadent fudge layer and chocolate crunchies, this dessert features one layer of chocolate cake (from my Best Chocolate Cake recipe) and one layer of ice cream separated by that same fudge-y, crunchy filling. It’s the perfect combination of textures and flavors. I can’t wait for you to try it.

Creamy No Churn Ice Cream Recipe

This recipe was inspired by some fantastic peppermint bark ice cream that I fell in love with but could never find again. Since I couldn’t get that unique flavor out of my head, I decided to recreate and share it with you!

Most peppermint ice cream is just so pepperminty and while I like it, I love it when paired with something a little more. Peppermint and chocolate are the perfect pair, and using both adds some fun crunch to this ice cream. When you combine the smooth creaminess of white chocolate ice cream and the texture of milk chocolate chunks with crunchy peppermint pieces, you have ice cream to fall in love with.

This no-churn ice cream recipe is really easy to make too. The base of this peppermint ice cream is basically sweetened condensed milk, melted white chocolate, and whipped cream. Once it’s made, we’ll add the peppermint and chocolate pieces. Just be sure not to stir too much once you add them in, or your ice cream will be bright pink!

Once frozen, you’ve got easy, festive ice cream. So good!
