This might just be the absolute best thing I have ever created. Even the most hardcore pumpkin pie lovers will say that this cheesecake gives their favorite dessert a run for its money.

• Flavor combo. This cheesecake takes my classic vanilla cheesecake recipe and tops it with my favorite pumpkin pie filling. While the layers remain separate, the flavors marry together in each bite like some sort of dessert miracle. The subtle sweetness and warm spices in the pumpkin pie filling next to the sweet tang of the cheesecake layer are nothing short of spectacular.
• Texture. Take creamy, smooth pumpkin pie filling next to thick, creamy cheesecake and put it all on top of the subtle crunch of graham cracker crust. Who could say no to that textural fiesta?
• Simple. You won’t have to jump through too many hoops to get this cheesecake right. Each component of this dessert (the crust, the pumpkin pie filling, the cheesecake filling, and the whipped cream) is quite simple to bring together, making this a great recipe for those of you relatively new to cheesecake.
• Make ahead. When it comes to the holidays, prepping ahead is the name of the game. Cheesecake is an excellent dessert to make ahead because it holds up really well in the fridge. You could easily make this cheesecake a couple days before Thanksgiving. Winner!

The Best Salted Caramel Cheesecake Cookies

Have you ever tried Crumbl’s incredibly soft, chewy cookies? They are always topped with some sort of gloriously tasty confection that takes them one (or five) steps beyond your average cookie. This salted caramel cheesecake cookie is my take on one of their classics.

The massive chewy graham cracker cookie base is full of graham cracker crumbs and is coated in them, as well. They are also made with some brown sugar for extra flavor and softness. The cheesecake topping is similar to a cream cheese frosting, but with less powdered sugar and no butter. The cookies I had from Crumbl recently just had the cheesecake topping spread on top, but you could also add their signature swirl. I do find that the caramel sauce spreads on and stays in place better when the topping is spread, instead of swirled. Since I love caramel sauce, I advise going with spreading it to allow for more of my amazing salted caramel sauce. The smooth, tangy cheesecake topping, the rich, velvety caramel, and the chewy graham cracker cookie make for the perfect combination of flavors and textures.

Easy Mini Caramel Apple Cheesecakes

You are in for a fall treat! These cute mini cheesecakes are bursting with caramel apple flavor and are the perfect dessert to bring to your next gathering. They are made with a classic graham cracker crust, a layer of my favorite caramel sauce and rich and creamy vanilla cheesecake. They are then topped with cubed apples that have been cooked in cinnamon and nutmeg and drizzled with even more caramel sauce. You will fall in love with how tasty these are!

I love that these mini cheesecakes are so much quicker to make than a traditional cheesecake and are much more hassle-free. The inspiration came from my Salted Caramel Cheesecake, which also has caramel sauce in the filling, but is a full sized cheesecake and takes longer to make. These mini versions bake up and cool in a fraction of the time and are so delicious with the addition of apples. Plus, you don’t have to worry about water baths, springform pans, or messy slicing.
